Borage is one of the easiest and most beautiful annual herbs for your garden, and will usually go to seed and reappear the following year.  It has beautiful star shaped, bright blue, nodding flowers from early summer until the first frosts, and wrinkled grey-green furry leaves. It has been used since ancient times for both medicinal and culinary purposes. It is a good addition to the wildlife, herb, vegetable and cottage garden – and is useful both as a culinary herb or for general garden use. It is deer and rabbit resistant and grows well in our area, reaching heights of between 1 and 3 feet.

The furry leaves can be used in salads and cold drinks, whilst the flowers are also edible with a fresh cucumber flavour. The flowers can also be used in salads and candied in desserts – and they float perfectly when used as a cocktail garnish.
